Seattle has long been rich in asian cuisines such as Thai, Korean and Vietnamese, but Japanese food has been slow to take root. Being obsessed with Japanese culture and cuisine, we wanted to help change this. At boom, we offer fresh ingredients, and recipes that are authentically Japanese or inspired by trends that we have noticed during our travels and dining in Tokyo. From hot soup and noodles, to items prepared on the wok, to chilled noodle dishes, to a variety of small plates, we hope we have created a healthy range of options for everyone. In Japan today there is a popular term, "my boom" that means, "The thing I am currently obsessed with." Our "my boom" is Japanese cuisine, and we are grateful to you for letting us create our food for you.

The Moore Theater: "Shinkai," 60th Honor Awards - Washington Architecture:

The History of The Moore Theatre: Built in 1907, the Moore Theatre is the oldest remaining theatre in Seattle. The original owner, James A. Moore, was a flamboyant developer responsible for many of the early homes and structures in downtown Seattle and Capitol Hill. The first building on the regraded Second Avenue, the Moore created a general shift away from Pioneer Square as the central business district while firmly establishing Second Avenue as the "film/theatre district" for Seattle. Architect E.W. Houghton gave the theatre a simple exterior with Italian and Byzantine terra-cotta details, while focusing much of the visual beauty on an opulent interior. Hailed as one of the most beautiful and completely equipped playhouses in the United States, the Moore boasted a grand lobby with mosaic floors, marble, onyx, carved wood, stained glass, and metal. There was also a ceiling fresco in old rose, cream and gold. Beams were supported by Muses representing Drama and Music. The theatre interior was resplendent with clusters of lights, rich hangings, and stained-glass paneling.

Chef Andy Ricker and his partners took over a building previously occupied by a Chinese restaurant with one of the best names ever: Hung Far Low. Ping is way far better, so ambitious its mere presence is revitalizing Portland's Chinatown. Ricker has assembled a menu that's multi-Asian, not Asian-fusion, the dishes rigorously executed and tasting uncannily authentic—there isn't much kowtowing to the West.

Tortoise has been started by a wife and a husband of keiko and taku shinomoto in the end of Oct. 2003, who moved in Los Angeles from Tokyo, Japan in June, 2003.

The longevity of human life is getting longer year after year, led by the advanced nations. But on the other hand, the life of man-made products is getting shorter as if it's in the inverse proportion.
What do we do with this irony?
Wisemen have been questioning themselves, trying to figure out the answer. We also have been wondering how we can take part in this. Growing up in the midst of Japanese Bubble age as students, we consumed life within the capitalism without questioning. But then one day, we started to see how things around us were unnatural. It made us halt once to think, so we quit our jobs; Taku left the company he was working for 13 years as the in-house furniture designer, without any constructive future plan. So we could think about 'things' around us, 'life' around us, and the 'work' we had. We decided to put matters in pause until we could see the road ahead of us. Fortunately, the recession and deflation at the time were kind to the unemployed, we were poor but managed to travel to many places, met many people who helped us through it. Without settling with a home, like a tortoise, living on the day to day, we continued seeking.
Slowly and dimly, but somehow surely we began to see the road ahead, which was 'tortoise-life', to have feet on the ground and live enriched life.

In Japan today, opposing to "fast-food", the term 'slow food' is often used. It doesn't mean the six-course-dinner or to spend hours to chew, but it's suggesting to take time, re-observe, and re-discover what we are actually eating. As the result, we would recognize the ingredients, cuisine to appreciate them, moreover would be able to enjoy the conversation with your accompany, enjoy the life itself. We realize this could apply for 'things' also. 'Things' which have been here for long time, 'technique' which has been fostered through history, 'shapes' which never change in time, or those which were born today but must be handed down to generations to come, and the 'things' which were made by hand with heart. Not to be caught by the category of folk-craft, traditional- craft, or modern design, we take care of these all together as 'tortoise products' with our heart and the utmost care.

We are not here to deny today's modern life style, we want to have balance within and proceed toward the real affluent life. We want to express the speed and quantity does not always equal beauty or wealth. As 'tortoise' symbolizes 'slow and steady' in America as it is in Japan, we named our company 'tortoise'. (turtle lives in ocean, tortoise is its generic name.)
Sea tortoise lives across the Pacific Ocean. We heard there is one who eats jelly-fish off California coast, then swims across to Japan to lays the eggs. Us, 'tortoise' too, would like to connect the countries across Pacific, and lay something new to our mother country Japan. We hope our thoughts could touch your life.

Yaeko Yamashita, the owner of "Laku", began her career in Tokyo, where she worked as a fashion designer for 14 years. Growing tired of the commercial aspects of the business and wanting to change the direction of her life, she traveled around Asia for one year, combining new discoveries with her expert technique to develop her own distinctive style.

In 1987 she moved to New York City, where she opened up her first handmade shop on Elizabeth St. Among the distinctions of this "anonymous" enterprise ( her shop had no name! ) was a full-page article in the New York Times which lavished praise on her original creations. In 1992 she brought her talents to San Francisco, and the rest is history.

There has been a sort of acceptance from many and one particular response was that, one of my lights was purchased by the wife of a famous movie director from San Francisco and she wrote me a letter of praises which touched my heart and gave me hope.
